STRAWBERRY BASIL POPSICLES

 

INGREDIENTS 

  • 1 can unsweetened coconut milk
  • 2 cans unsweetened coconut cream
  • 1/2 cup strawberries diced
  • 2 tablespoons honey (more or less depending on your desired level of sweetness)
  • 1 teaspoon chopped basil 

RECIPE

In a mixing bowl, add one can of coconut milk and two cans of coconut cream and whisked until combined, mix in honey and basil.

Fill Ice Pop Molds 3/4 of the way with coconut milk and then add strawberries. Insert bamboo stick and continue this process until you have completed the number of popsicles desired. Freeze overnight before serving.  

For a variation, add diced peaches, blueberries and mint.
